Add 1⁄2 teaspoon of a spice or a combination of spices of your choice with the salt, such as paprika, cumin or coriander. You can also add some finely grated lemon zest (paprika and lemon zest are added in the photo).

What to do
Heat the oven to 150C/gas mark 2. Strip the kale from the thick, woody stems. Wash the kale and dry thoroughly as it will crisp up better if it is dry.
Place in a large bowl tearing any larger leaves into bite- sized pieces. Add the olive oil and massage into the
leaves. Spread in a single layer onto a baking sheet (or 2) taking care not to overcrowd the tray.
Bake in the oven for about 10 minutes, give them a stir and then bake for another 10 minutes or so until crisp but still green. The baking time depends on your oven so keep checking and stirring.
