Ingredients
- 500g new potatoes
- 150g green beans, top and bottom trimmed
- 4 eggs
- 20g capers (optional)
- 40g black olives
- 1⁄2 lemon
- Drizzle olive oil
- Salt and pepper
- 1 tin tuna
- 60g parmesan or other hard cheese, grated or sliced thinly with a vegetable peeler
“You can make this with cooked chicken instead of tuna. Broccoli works well instead of green beans.”
What to do
- Boil a large pan of salted water. Chop potatoes in half
and add for 10 minutes. - Add green beans and cook for another 2 minutes.
- Drain veg and run cold water over to cool.
- Boil another pan of water and add eggs to boil for 8-10
minutes (10 if you like them fully set). Run under cold water
until cool. - Remove shell and cut into quarters
- In a mixing bowl add potatoes, beans, lemon juice,
drizzle of olive oil, olives, and capers (if using). - Drain tuna and mix into salad. Mix well and taste.
- Add more lemon/seasoning if needed.
- Finish with eggs and cheese to serve.
