  • 150 g fresh or frozen peas, cooked
  • 1 tablespoon olive oil
  • a few sprigs of fresh mint, chopped
  • a handful of fresh parsley
  • lemon juice, salt and pepper

“You can use other herbs such as basil, chives or dill”

What to do

  1. Place the peas in a bowl along with the olive oil and lemon.
  2. Mash with a fork, potato masher or hand blender until you have a purée.
  3. Season to taste with salt, pepper and lemon
