Ingredients
- 150 g fresh or frozen peas, cooked
- 1 tablespoon olive oil
- a few sprigs of fresh mint, chopped
- a handful of fresh parsley
- lemon juice, salt and pepper
“You can use other herbs such as basil, chives or dill”
What to do
- Place the peas in a bowl along with the olive oil and lemon.
- Mash with a fork, potato masher or hand blender until you have a purée.
- Season to taste with salt, pepper and lemon
